Tostito Chicken Casserole

So, I shall call this recipe "Tostito Chicken Casserole", because I have no idea what else to call it...
All I know is that it's yummy, and it most definitely works on nights you are short on time!
Chicken Casserole
Here's what you need:
2-3 Cooked Chicken Breasts (shredded or diced)*
*I like to marinate mine in Italian Salad dressing and then cook it in the Crock Pot...the day before I make this recipe...just makes it easier for me. When I cook chicken like this, I usually make a little extra to use for other recipes throughout the week.
Tostitos (Surprise! - You can use any kind...I had "scoops", so I used "scoops".)
2 Cans of Cream of Chicken Soup (Sometimes I use Cream of Chicken with Herbs - Just for fun!)
I Can of Black Beans (Drained)
1 Block of your favorite Cheese*
*The Pioneer Woman says to always shred your own cheese.
She is a wise, wise woman...It most definitely tastes better.

For extra creaminess, add a small container of sour cream.
For an extra kick, add a small can of green chilis.
For a little additional excitement, serve it with some salsa and green onions thrown on the top.

In a large bowl, create the following mixture: soup, drained black beans, half a block of shredded cheese, chicken, sour cream (optional), and green chilis (optional).

Layer Tostito chips under this mixture - I usually create two layers before topping the casserole with the other half of the block of cheese (shredded - smile).

Then I throw green onions on my portion...because my hubby doesn't care for green onions.
I still love him, though.
Throw it in the oven for at 350 degrees - for approximately 30 minutes~

So I made this recipe the other day...and I had a little help. Honestly, I just wanted to quickly throw dinner together...I didn't really want any "help"....but I let my little guy climb up on his "cooking stool" and assist me in putting this casserole together. Boy was I glad I didn't turn him away - We ended up having such a great time.
