(not too tart - just right!)
As warmer weather has come our way, I have been craving lemonade, lemon bars, lemon pie, and lemon cookies! When I spotted an easy-looking recipe for lemon cookies, I decided to give it a try!
I made a couple of little changes and thought I would share with you~
1 package of lemon cake mix (18.25 oz.)
1/3 cup of vegetable oil
1 teaspoon of lemon extract
1/3 cup of confectioners' sugar
Preheat oven to 375 degrees~
Mix ingredients together until blended/separate & roll into cookie balls.
(You may choose to combine the cake mix, eggs, oil, and extract and then roll your cookies in the confectioners' sugar; but I mixed everything together and the consistency was delicious!)
Bake for approximately 10 minutes~
These tasted yummy warm (w/ a glass of milk).
These also tasted yummy cool (w/ a glass of milk).
On Day #2 of having these lemon cookies around (Can you believe they lasted that long?), we decided to slap two of them together with Vanilla Bean icecream in between, and at the moment of the very first bite, my life was changed forever. *insert dramatic sigh*
