Today, I am featuring Strawberry Hand Pies!
Individual-sized gems that make for a perfect summer treat!
Ingredients:
2 3/8 cups of all-purpose flour
1 teaspoon of baking powder
1 1/4 teaspoons of salt
1/2 cup of chilled water
1 stick cold unsalted butter - cut into small pieces
2 large egg yolks
1 teaspoon of vanilla extract
3/4 pound of strawberries - cut into 1/2 inch pieces
1/2 cup confectioners' sugar
3 tablespoons of strawberry jam
1 tablespoon of sanding sugar
**Usually if a recipe calls for more than three or four ingredients, you can count me out; but I promise you....these are not too daunting!**
Preheat oven to 350 degrees.
Directions for Dough:
Combine the following:
2 1/4 cups of flour
1 teaspoon of baking powder
1 teaspoon of salt
1 stick of butter
(I used a pastry cutter to combine this mixture.)
Add in the following:
1 egg yolk
1/2 cup of chilled water
1/2 teaspoon of vanilla extract
(Mix until combined.)
Transfer dough to a floured surface & knead until dough comes together. Place the dough in a bowl; Cover it with plastic wrap; Refrigerate for 15 minutes (while you prepare the filling).
Directions for Filling:
Combine the following:
3/4 pound of strawberries (cut until small pieces)
1/2 cup of confectioners' sugar
3 tablespoons of strawberry jam
1/2 teaspoon of vanilla extract
1/4 teaspoon of salt
Preparing the Pies:
On a floured surface, evenly roll out the dough (approximately 1/2 an inch thick).
Cut dough into approximately 6 separate rounds (approximately three inch circles).
Evenly roll out the circles; Spoon 2 tablespoons of filling onto each half circle
(leaving at least a 1/2 inch border); Fold the dough over the filling; Using a fork, crimp the edges to seal; Transfer each hand pie to a parchment-lined baking sheet.
Final Touches:
Create an egg wash by beating one egg yolk & one tablespoon of water together. Evenly brush this mixture over each of the hand pies.
Using a toothpick, poke a few small holes in the top of each pie.
If you like, sprinkle a 1/2 teaspoon of sanding sugar on each hand pie.
Bake 30-35 minutes - or until golden brown.
Hubby likes his served warm with vanilla ice cream on top.
I like mine served cold with vanilla ice cream on top.
