After bringing our oldest home from the hospital, sweet friends brought us all kinds of yummy meals! This Creamy Chicken Casserole was one of our favorites!
We have made it ourselves and eaten it often ever since.
On the day (or the day before) you know you're going to make it, throw some chicken in the crockpot~ (This would be a great opportunity to try the Italian dressing marinade idea that I mentioned the other day!) After the chicken cooks completely, let it cool and then dice [or shred] it up and then mix with two cans of Cream of Chicken Soup. Sometimes I add an 8 oz. container of sour cream - just for a little extra creaminess.
I spread that mixture out in a 9 x 13 pan and then cover it with one sleeve of crushed Ritz crackers.
For it to cook up just right, toss a handful of butter pads on the top.
You may choose to leave the butter pads off the top, but I'm not sure I would advise that...I don't want you to live a life of regret...Life is just better with butter.
Let this casserole bake for about 30 minutes on 375 degrees~ After it's finished (a little golden brown on top), it is perfect served on a bed of white rice! Minute Rice made in the microwave is our go-to!
