These Fiesta Bowls make for the perfect quick-fix meal,
and they are also delicious served as leftovers!
Start with your Crock Pot!
(Most of life's most wonderful occasions begin with a Crock Pot.)
Throw some chicken in your slow cooker!
(Frozen...a store-bought rotisserie...anything goes!)
In addition to the chicken, add a block of cream cheese, a can of [drained] black beans, a can of corn, a can of diced tomatoes...or a can of Rotel...or a jar of your favorite salsa, a pack of taco seasoning, and any other spices you might like.
This is such an easy meal to make, and it is delicious!
There are really no rules to making it - I typically just use this meal idea as an opportunity to clean out my pantry!
Allow your mixture to simmer in the Crock Pot for at least 2-3 hours.
*If you chose to use frozen chicken - which I usually do, it will need to cook a little longer.*
We serve the mixture over rice, but it can also be thrown on a bed of crispy tortilla chips or on flour tortillas - Yummy!
I realize I have called these Fiesta Bowls, but this concoction also tastes amazing on a plate.

Thanks, Liz, I've wanted to make this for some time now - and it just may be tonight's meal, seeing as how I have all the ingredients and need to figure out dinner!
