An Update on My Boys

I love being a "boy mom"! I love the loud, active, rowdy play - even if they do average multiple gallons of milk a week. We have a spare fridge/freezer order in the works...and I refuse to even let myself start thinking about the grocery consumption that is to come when they are teenagers.

Here is an update on my two growing boys:

Caleb:



Weighing in at 29 lbs, Mama's back feels every ounce! He is in the 100th percentile for height, and growing by the minute. The doctor has encouraged us to go ahead and transition to a toddler bed, but we continue to put that off - maybe this weekend will be the weekend we take his room to the next level of "toddler-proofing" in order for Mommy to feel comfortable with this transition.

He's wearing mainly 2Ts in regular clothes and 3T in pajamas. He wears an 8.5 shoe and is currently loving cowboy boots and Crocs. They make life easy - Sign me up!

He's talking up a storm - repeating everything he hears and some! It's hilarious - most of the time! We love the way he greets us in the mornings with "HEY!" and yells "BYE-BYE!" at night instead of "night-night". He's fun and active - 100% boy! He is currently obsessed with shoes, Curious George, wheels, doors, keys, and the neighbor's dog. He's an awesome sleeper and a well-rounded eater! He is strong-willed and makes a habit of testing the limits - but he's learning, I hope (and so are we).

He attends weekly story-time/music-time and art class and loves getting together with other kids for co-ops and play dates. In a few months, we will start attending weekly Community Bible Study - which offers an incredible curriculum for even the toddlers. We visited this past week, and Caleb came away quoting part of a Bible verse he had learned in his class. Is anything in the world better than that?!

We are trying to teach him the new baby's name. He has trouble saying "Isaac", but he points to my belly and says "baby" quite often. The only problem with this is that he thinks all big bellies have babies in them. We are concerned that this may become an issue, but we are hopeful that strangers will be understanding. ;-)


Isaac:

This week, we got to see his profile (I just love that view!), and watch him suck on his fingers and stick out his tongue.
Weighing in at just under 2 lbs, Mama's back feels every bit of that as well - or maybe it's the 25 lbs that I've gained that has me waddling. Wait - no need to bring my stats in to this blog post. *smile*

Isaac is very active! I felt those first flutters around the same time I did with Caleb, but he kicked the daylights out of me one evening around 17 weeks - This was a shocker, and he's continued to do this every so often. David has loved seeing my belly start to "jump", and he usually makes a comment like "I can't believe this is happening!" or "Are you ready to do this all over again?"(Do you sense the concern over the coming sleep deprivation? Yes, I have experienced some mild panic attacks over this as well.)

Our families are excited about another new addition, and we are looking forward to our family growing! I plan for my summer of nesting to include the making of 135,693 freezer meals [to use after baby comes] and lots of time in the pool! This will be my second summer pregnancy, and I am prepared with plenty of sunscreen, water bottles, and a pool noodle (Oh yeah, and swim diapers for Caleb!).

Muffin Tin Calzones

Mini Calzones baked in a muffin tin? Sure!

Muffin Tin Calzones
Calzones

Ingredients:
Pre-made Pizza Dough 
(Life is short, friends!)
Ricotta Cheese
Pepperoni
Fresh Tomato
Mozzarella Cheese
Italian Seasoning
Marinara Sauce

Directions:
Cut pizza dough in to biscuit-size rounds. 
Lay single rounds in the bottom of each section of your muffin tin. 
Then start "stuffing".
(Embrace the mess!)


I stuffed ours with ricotta cheese, pepperoni, and fresh tomato,
(You can use different meats, various cheeses, additional veggies, anything goes!)

Next, I covered all of those yummies with another single-round of pizza dough.
*Lightly press the dough together to "seal".*

(You can also top with melted butter and Parmesan cheese!)

These bake at 400 degrees for approximately 20 minutes.

Serve with marinara sauce to use for dipping. Yummy!

These are definitely a hit at our house!

**Fellow Mommies, if you're able, prepare these during nap time - Dinnertime will be a cinch.**

Absolute Organics' Produce Delivery - My New Love

Ladies and Gentlemen, I have a new love in my life, and it is known as "Absolute Organics". If you live in the Charlotte area, you have the opportunity to fall in love, too. I read about this great service while browsing my friend's blog - "Smartter Each Day".

"Absolute Organics" is a family-owned business, and we have signed up with them to receive at-home produce deliveries. No pick-up is required; delivery is free; and you don't even have to be home at the time of drop off - They will simply leave the goodies in a cooler on your porch.

This is snapshot of what a typical delivery looks like for us. We are signed up for the smallest ($30) batch. When our newest addition joins us, we will probably upgrade to the next size in order to have enough produce to make his baby food. Currently, we do a 50-50 split of fruits and vegetables, but you can adjust that based on your family's needs. 
*Absolute Organics allows you to choose which items you will/will not use. You will never receive items that are on your "dislikes" list. I love that!*
We have been so impressed with the freshness of the produce! It has far surpassed our expectations in every way! Hubby is particularly pleased that the apples are never bruised and the avocados are always perfect!

Prior to signing up for this service, I tracked our produce spending for a number of weeks. Not only am I NOT paying more for super-fresh, organic yummies; but it is all being delivered to my door. This means fewer trips to the grocery store (music to a mama's ears).

An Easy Way to Organize & Display Collections

As we've been working to get settled in our new house, we have slowly but surely started to hang pictures, organize closets, etc. In the process of unpacking, I came across a few different collections of things that I didn't want to keep stored away in the attic for the next 50 years.


I wanted a clutter-free way to include these collections in our decor, and canning jars -of various shapes and sizes - have served as the answer.

These wooden spools of thread belonged to my husband's grandmother. I love having them around to remind us of his sweet grandparents.

This is a jar of old bobbins we picked up at an antique shop in Tennessee. They spoke to us right away, and until we think of a different use for them, I love displaying them this way.

Some of these buttons are old - Some of them are new. Either way, I want to keep them handy. They will be great to use with Caleb for sorting/classifying activities. You didn't think I actually planned on using them to sew, did you?

We love the mountains, but we also love the beach! In our travels, we have collected so many beautiful shells, pieces of coral, rocks, sand dollars, etc. Here are a few shots of the way I have chosen to display some of these things:



I love decorating with personal items that will remind us of special memories that we have as a family. This was a super easy project to attack! The most time-consuming part was cleaning up the various jars we had picked up at yard sales, flea markets, etc.

I have one last grouping that I plan to display in this way - We have a collection of various coins from foreign countries, and I definitely don't want these pieces to remain in a box. I want to enjoy them~

A Lowkey Easter~



This Easter was a little different than usual~ Since [for obvious reasons] runny-nosed children are frowned upon in the church nursery, we spent our Easter morning at home. While I was sad that Caleb didn't get to wear one of the fifteen Easter outfit options I had laid out for him; and while it was most definitely odd not gathering with our church family for worship, we had a really special morning together as a family.

We spent time in praise together and celebrated the day with Easter books, Easter baskets, a special Easter lunch, a 19-month old's version of an Easter egg hunt, and lots of outside bubbles and sidewalk chalk. 
As Easter approaches [or any holiday for that matter], I love reading both fun and serious books to celebrate the occasion. With teacher blood running through my veins, I just can't help but break out reading material for any and all celebrations.

I love putting together Easter baskets for my boys - Yes, David gets one, too! My mom is the one who makes sure I still have Easter morning goodies - I love this and so many other things about her! (Random Fact: She gave me my first tube of mascara in one of my Easter baskets - circa 1996ish. This was a huge deal - and let me tell you...I was lookin' lashy at that morning's Easter Sunrise Service. Is lashy a word? I kind of like it...)

Someway...Somehow, these glasses have become an annual part of our Easter celebration. Check out this next picture from Caleb's first Easter (2012):

Caleb's favorite part of Easter - for the second year in a row - has been the Easter grass. Who needs candy?!

It was nice being together over the long weekend, and we are glad to be kicking these two-week-long colds to the curb! Happy Spring, everyone!
