Hashbrown Casserole

This week, I posted this plea on Facebook:

Okay, friends....what goes in that casserole that is always at any good church potluck? The one with little cubed potatoes....cheese.....a crunchy topping....Do you know which one I'm talking about? Pregnant girl needs to know stat!

My friends were quick to respond, and I was quick to run to the grocery store to gather what I needed!

Hashbrown Casserole

This recipe calls for:
1 Package of Hash Brown Potatoes
(These Diced Potatoes from Simply Potatoes were perfect!)
1 Stick of Butter
1 Block of Cheese (grated)
8 oz. of Sour Cream
2 Cups of Crushed Corn Flakes

*For a little bit of extra flavoring, you can use onion powder or onion flakes - but when I saw that Simply Potatoes sold diced potatoes that already included a smidge of onion, I knew that would be perfect!*

I mixed the potatoes together with the butter, sour cream, and grated cheese. 

I added some of these shredded hash browns as well - probably about half the bag - just to make my batch a little larger.

I mixed all of my ingredients right there in the baking dish. Don't you just hate when you dirty extra dishes? I was determined to make cleanup easy!

 After all of this deliciousness had been mixed together and spread out evenly in the casserole dish, I crushed the corn flakes and sprinkled them across the top of the mixture. 
I baked the concoction for 1 hour at 350 degrees.

In order to continue my theme of easy cleanup, I served this on paper plates...
...doing so also helped to give me that church potluck feel I had so desperately wanted!
