Lasagna Roll-Ups

Not too long ago, I spotted this pin on Pinterest: a Recipe for Pizza Roll-Ups. I decided to put my own twist on them, and I thought I would share the recipe with you guys!

I started by putting one can of diced tomatoes as well as some seasonings (minced onion, garlic, Italian seasoning) into my food processor. Then I poured all of that out in the bottom of a baking dish. 
This mixture smelled delicious!

 On the stove, I had 2 cans of tomato sauce simmering with 2 lbs. of ground chuck that I had browned earlier in the day. 
 I boiled one box of lasagna noodles - I drained them, laid them out flat, and let them cool for a bit before layering tablespoons of ricotta cheese and the meat mixture. The original recipe called for pepperoni, which my husband thought would also be good to add. He would probably also like me to add bacon as well, but a woman must draw the line somewhere. 
 I rolled them up...
 ...and pitched them in the pan. 
 I covered the roll-ups with a full bag of shredded mozzarella cheese and baked them for about 30-40 minutes on 375 degrees. 

I had a few extra ingredients, so I made a single serving of this recipe (two rollups) and placed it to the side. I had envisioned taking this to a lonely widow or passing it [piping hot] out the window of our van in to the hands of a homeless person. Unfortunately, I think it was eaten while I was out this evening; but it got me to thinking how we all could do just a little more sharing...especially this time of year.
