When we came home from the hospital, our Sunday School class sent lots of delicious meals our way! One family made us the yummiest Ham and Spinach Quiche, and I want to share the recipe with you! Who knew quiche was more than just a delicious breakfast food? (Maybe I'm just a little slow.)
Recipe for Ham & Spinach Quiche
You will need a 9-inch pie plate or 9-inch quiche pan and the following ingredients:
1 All Ready Pie Crust (I like the Pillsbury ones found in the dairy case.)

Mozzarella Cheese
Cheddar Cheese
Diced Ham (approximately 1 cup)
Cheddar Cheese
Diced Ham (approximately 1 cup)
3/4 c. Milk
2 Eggs
1 Bag of Spinach (Cook it...Cool it...Drain It...Toss it in)
(You may always want to add garlic, onions, mushrooms, other seasonings/cheeses/veggies/etc.)

Prepare crust according to package directions.
Layer Ham, Spinach, and Cheese Repeat.
In a medium bowl, combine milk, eggs, any seasonings you like, etc. Beat well. Pour egg mixture over the top of your top layer.
Bake at 400 degrees for approximately 30-40 minutes or until knife inserted near center comes out clean. Let stand 15 minutes before serving.
Cut and Serve!
Recipe for Pizza Quiche
You will need a 9-inch pie plate or 9-inch quiche pan and the following ingredients:
1 All Ready Pie Crust (I like the Pillsbury ones found in the dairy case.)
Mozzarella Cheese
Cheddar Cheese
Sliced Pepperoni
3/4 c. Milk
2 Eggs
1 Jar Spaghetti Sauce
1 tsp. Italian Seasoning
(You may always want to add garlic, onions, mushrooms, other seasonings/cheeses/veggies/etc.)
Prepare crust according to package directions.
Layer Mozzarella and Cheddar Cheese in crust-lined pan. Top with pepperoni. (We also add ground beef to each layer - You could also use Italian sausage.) Repeat.
In a medium bowl, combine milk, eggs, Italian seasoning, etc. Beat well. Pour egg mixture over the top of the final layer.
Bake at 400 degrees for 40-45 minutes or until knife inserted near center comes out clean. Let stand 15 minutes before serving.
Meanwhile, simmer spaghetti sauce for 2-3 minutes or until thoroughly heated.
Cut quiche in wedges and spoon spaghetti sauce over each wedge when serving.
