The Pioneer Woman's Peanut Butter Bars

Have you ever tried The Pioneer Woman's Peanut Butter Bars? The moment I saw them featured on her show, I knew they would be something my crew would love, so I decided to give them a try!

Peanut Butter Bars

Ingredients:

2 Sticks of Softened Butter
1 Cup of Chunky Peanut Butter
2 Cups of Powdered Sugar
1 Box of Vanilla Wafers
1 Bag of Semi-Sweet Chocolate Chips

(Topping)
2 Cups Semi-Sweet Chocolate Chips
1/2 Cup of Creamy Peanut Butter


Begin by mixing together the bag of chocolate chips...
(I used half of a bag of semi-sweet chocolate chips and half of a bag of peanut butter chocolate chips.)

...two sticks of softened butter....and one cup of crunchy peanut butter.

Either hand beat or use a food processor to crush the Vanilla Wafers in to crumbs. 
Then add those to the above mixture...

...along with the powdered sugar. 
(I almost forgot this ingredient when I was making them!)

Evenly spread this concoction in to a greased 9x13 pan. 

While you are preparing the above mixture, the topping can be preparing on the stove!

How to Prepare the Topping:

In a double-boiler, melt 2 Cups of Chocolate Chips and 1/2 cup of creamy peanut butter. 
(I used one cup of semi-sweet chocolate chips and one cup of peanut butter chocolate chips.)

When this mixture reaches a smooth melted consistency, pour it evenly across the top of your dessert. 

I reserved a handful of Vanilla Wafer crumbs to sprinkle across the top of  this treat. 
You can use nuts...pretzels...candy anything you like.

Chill this pan of deliciousness in the fridge (for at least an hour).
Slice and serve a few hours later - but be warned...
...Your life will never be the same.

Though I completely trust The Pioneer Woman, I did tweak this recipe a bit - based on what I had in my pantry as well as my family's preferences - and you can do the same thing.

5 Low-Cost Babysitting Options

In this post, I am sharing five of my favorite low-cost babysitting options! When it comes to childcare, everyone wants to know that their children are safe and thriving, but it can be difficult for many families to afford some of the options that are out there. As a full-time mom, these ideas have been helpful to me as I have sought to find pockets of time to regroup and recharge.

Low-Cost Babysitting

Babysitting Swap - Find a friend or a group of friends with whom you could coordinate a babysitting swap. You watch their kids while they watch yours - and vice versa. It is absolutely imperative that you find individuals who are dependable to keep their word and stick to the agreed-upon schedule. Whether you choose to swap kids weekly or monthly, this can be a great [FREE] option! Think errands, doctor's appointments, date nights, the sky is the limit!


Mother's Morning Out - Is there a Mother's Morning Out program offered somewhere in your area? Sometimes these are free, but if not, they are usually offered at a low-cost to families. They can be a great option for kids of all ages and can provide you with some time to tackle your to-do list or walk around Target without your kids in tow.

Trade with Hubby - I have an amazing hubby who is quick to push me out the door in order for me to have a break/time to myself. Why does he do this? Yes, he's wonderful in 1,000 ways, but when we started our family, he very quickly learned that I was a better wife...mom...all-around person when I am able to get a breather. For lots and lots of reasons, daddies need time alone with their children as well and this gives our kids that alone-time with him while I step away for a bit. Everybody wins! P.S. Ladies, make sure you are giving your man time to regroup as well - Do not expect that his time at work...alone time in the car (as jealous as we may be of that at times) is enough for him. Allow the man an evening with his friends...a morning on the golf course...a weekend retreat with his men's group from church. Whatever he needs, make it happen - especially, especially, especially if he is extending the same gift to you as you need it.

Mommy's Helper - This has been huge for us! We have a couple of different young tween/teenage girls who come help me with my little ones while I work on household tasks such as putting away laundry, starting dinner, cleaning the bathrooms, etc. These girls have even helped me tackle my kids at the pool - which with my boys being so close in age, this has been a huge help! In our situation, the girls' parent(s) drop them off at our house (No loading/unloading of kiddos!), and if there would ever be any kind of emergency, I am already at the house and able to assist. This type of situation provides young girls with great babysitting experience - and comes at a lower price than a babysitter. Once again, you definitely want to find find individuals who are dependable to keep their word and stick to the agreed-upon schedule.

Programs - Is there a local chapter of Community Bible Study or Bible Study Fellowship or MOPS near you? Does your church offer Bible Studies or workout class for moms? In the mornings? In the evenings? What about at other like-minded churches in your area? Depending on your schedule, these kinds of commitments can sometimes be a little tricky, but hopefully you have a few options in your area. In adding these types of things to our weekly routine, my kids have had the opportunity to be involved in some great faith-centered classes designed specifically for their age groups. When it comes to this option, I'm not just looking for babysitting, I'm looking for something that will benefit all of us - and I have been thankful to find some options that have provided me with time to focus on my spiritual health/physical health while knowing that my children are learning and growing as well.

5 Ways to Disconnect from Technology

Our culture allows us the opportunity to be connected in ways that earlier generations could have never imagined. In addition to the ability to stay in-touch with others at all times, my cookbook, my calendar, my reading material, and my grocery list are all together on one handy-dandy device...my phone. I think that's pretty incredible. However, while this can all be wonderfully convenient, it can also be somewhat of a curse...

...a curse that leads to our choosing Facebook over meaningful conversation with our spouse.

...a curse that results in more time spent reading blogs than reading books to our little ones.

...a curse that creates an obsession with Pinterest...while our homes sit in disarray.

...a curse that (unless we are careful) will rob us of our days.

As a mom, I so strongly desire to be intentional about the way I spend my moments at home. I have a longing to savor evenings with my husband. I have an overwhelming desire to mentally capture sweet memories with my little ones. I have a calling to create a life-giving environment that nurtures everyone who calls our house home.

5 Ways to Disconnect from Technology

If you're anything like me, you know how easy it is to pick up your phone and spend too much time scrolling through your news feed...you understand how tempting it is wind down at night with Pinterest...you relate to how fun it is to play with all of the fun filters on Instagram. I get it. I am right there with you. I truly enjoy the on-line world (Hey, I even have a blog!), but I have found it necessary to establish a few personal guidelines that have gifted me with time where I am able to enjoy the freedom that comes from being disconnected from technology.

5 Ways to Disconnect from Technology

1. Silence Notifications - Most of the time, my phone remains on silent - no ringing, no buzzing, no vibrating, nothing. All notifications are silenced - Sometimes I disable the Internet altogether. This keeps me from being interrupted by phone calls, texts, e-mails, etc. When I have a chance to check my phone, I can glance at any activity I've missed. If I need to return a call or text or an e-mail, I do it - when I'm able. The only exception is if I am away from my children.


Don't completely love this idea? Most devices allow you to customize the notifications you would like to be silenced. For instance, there are times when I will silence all calls except for hubby's - This is a great option if you're concerned about being available for emergencies. 

2. Communicate Your Schedule to Your Family & Friends - Do you homeschool in the mornings? Are Thursday nights set aside for family game night? Do you fast from social media on the weekends? Communicate these things to your family/close friends - This will help them know when is/is not a good time to reach you.

3. Charge Your Phone in Another Room - Keeping my phone out of reach has been the best way to keep me from casually picking it up and glancing at it more often than necessary. This has been especially effective in the evenings/at night when we're winding down together as a family.

4. Leave Your Phone Behind - If we're heading out for a family activity - a walk, a trip to the park, a weekend event, etc. I will oftentimes leave my phone behind. If hubby has his (for any emergency we might have), I leave mine at the house.
If the thought of doing this creates panic inside of you, that may be a sign that it's time for you and your device to start spending some time apart. 

5. Establish Screen-Free Zones - In our family, our screen-free zones are:

Mealtimes - Devices are not welcome at our table.
Bathtime/Bedtime - This is special family time for us.
When Daddy Arrives Home from Work - I want the focus to be on him.
 Family Outings/Activities - We want to savor the time we have together.

What works for you?
The above guidelines have been exactly what I've needed in order to maintain a healthy balance with technology. It is an area of life that is ever-changing. Therefore, I try to be intentional about assessing/reassessing how I am using it/how much I am using it. 

You may find yourself needing to remove distracting apps from your phone...You may realize that you need to separate yourself from your phone at bedtime...Whatever you need to do to feel the freedom of having sacred moments when you are disconnected, I challenge you to do it! I promise you will be glad you did!

Establishing boundaries in this area may frustrate those around you...

How to Purge Your Closet

Today, I am sharing my best practice for How to Purge Your Closet

While everyone will have a different approach to tackling this chore, these tips have helped us be successful in eliminating clothing clutter and staying organized!

Purge Closet

1. Remove everything from the closet (or dresser)! This will allow you to take a close look at each item. Check for stains/wear. Check the size - Does it still fit? Do you truly love the item? If you had the chance to buy it all over again, would you? Do you actually wear the piece - not someday, but right now?

2. Think carefully about each item that you return to the closet/dresser. Purge items that are stained/worn. Purge items that no longer fit. Purge items that no longer fit your season of life. Purge items that you don't truly love. Purge items that are high maintenance. Purge items that you pass over every single time you go to pick out an outfit to wear.

I organize my closet by:

Sleeveless Tops
Short Sleeve Tops
Long Sleeve Tops
Sweaters
Sweatshirts
Skirts
Dresses
Pants
Jeans
Coats

Within in section, [I will admit] that I keep things color-coded (for the most part). 
When it's time to put laundry away, everything has a place. 
When it's time to pick out an outfit, I know where everything is. 

*Your approach to this may differ depends on where you live (We are in the Carolinas where many items work year-round.), the size of your closets, etc.*

3. Make smart decisions about what to do with items you have purged:

My Favorite Ideas

Return any/all recently purchased/gifted items that still have the tags - Yes, even if you don't have a receipt. Many stores will offer you store credit toward/or the option to trade for something you will actually wear.

Sell higher end name brand items on eBay or another great on-line marketplace - new options seem to be popping up all the time!

Have a yard sale! Now hear me out...I'm not talking about a yard sale where you practically give your items away - charging customers only $.25 or $.50 per item simply because you want to get rid of the stuff. There are ways for you to actually make money having a yard sale, and I would love for you to read my tips for how that is possible! 


Donate your items! Help a charity of your choice while also taking a tax deduction for yourself - It's a win/win for everyone! 

I love this tip from A Bowl Full of Lemons
Keep a laundry basket (with a trash bag inside) in your closet. Whenever you want to purge clothing, just toss it into the basket. Once the trash bag is full, it's time to donate!

A Little Encouragement: 
Keep few (if any) sentimental items. When it comes to purging items that are no longer needed, sell them...donate them...pass them along to someone else before they yellow...before they become dated/out-of-style. Release them - allowing someone else to enjoy the life that's left in them rather than you hoarding them for years to come.

Fishing with Papa

My kids love spending time with their grandparents, and one of our sweetest memories from this summer was going fishing with Papa. 

I have special memories of fishing with my dad, and I am excited that my kids will be able to do this same thing with him. 

First stop: The bait shop...

Papa outfitted Caleb with a ball cap as well as the perfect pair of binoculars - Every true sportsman needs a pair, and he was in Heaven! Weeks later...Caleb is still talking about those binoculars~

Pineapple BBQ Chicken

I love finding simple recipes that allow me to use my slow cooker for easy prep! 
This Pineapple BBQ Chicken has been a huge hit at our house, and I have a feeling the ones you cook for will love it, too! 

Pineapple BBQ Chicken
Pineapple BBQ Chicken

Add the following ingredients to your Crock-Pot:

One Bag of Frozen* Chicken 
*(or fresh - if you have it on hand)
1 Jar of Pineapple Chunks

For the most tender chicken, allow this mixture to cook on low for at least four hours. 

Serve with rice.
*We love using Minute Rice. 

So, so simple and super yummy!

Dinner and a Book

An easy way to include literacy activities in to your everyday routines is to read books at mealtime

Is mealtime crazy at your house? 

Books have been a great way to bring a little bit of calm to our dinner table, and if your kids are active like mine, it may be one of the few times, you can actually catch them sitting during the day.

Choose a book and then find a fun food item to go with it...Or choose a fun food item and then find a book to go with it...either way works!

For this particular activity, I grabbed this Zoo Pasta from Tuesday Morning and then found an animal book (from our personal library) to read along with it.

Consignment Shopping Induces Labor

The Internet is full of ideas for how to naturally induce labor...Eat spicy food. Take a walk. There are all kinds of ideas out there, but do you want to know what really works? Consignment Sale shopping. Yes, I am here to tell you that consignment sale shopping induced my labor.

Let's rewind to last Tuesday evening when I headed off to my first consignment sale of the season. I wasn't sure if I would be able to go to any this year, but I decided to go to this one (even though I knew I was dilated to 2 cm. and anything was possible). I had been spending my days cooped up at home, and I was simply dying to get out of the house! 

This particular consignment sale is a big sale...held in a big building...a big building that doesn't have air conditioning...Did I mention that the sale is held in a big building that doesn't have air conditioning? Heaven, help us.

Upon entering, I immediately regretted my decision to shop consignment that evening...but I started looking around anyway. I found a few things...a couple of items for my boys, and several cute things for my soon-to-arrive baby girl...and then I saw the check out line. Oh.my.goodness. In the past, I had dealt with long lines at this sale. One year, we didn't return home til after 2 am. Yes, you heard me correctly - but in recent years, it seemed that this sale had gotten their line issues under control. Well, that evening...not so much.

I wasn't sure what to do. Put my cute items back on the racks and head home? Yes, that's probably what I was going to have to do. While I was roaming around contemplating my decision, one of the workers brought me a cold bottled water. I almost kissed him. I have never been more thankful for someone to notice that I was big...and sweaty...and miserable in every way. As I stood and chugged my bottled water, I crossed paths with another worker who I happen to know. In our conversation, she picked up on my panic regarding the l.o.n.g. line and she offered to take me to the front of the line. 

Oh, you don't have to do that, I said. 

Absolutely, she said. 

No, no, no! Don't worry about me! Half the women in here are pregnant, I said. 

Not nearly as pregnant as you, she said. 

I almost kissed her. I have never been more thankful for someone to notice that I was big...and sweaty...and miserable in every way.

After checking out, I made my way home...and before I went to bed, I sent this dear soul a Facebook message that read: Thank you! You saved my very life tonight.

Two days later, I went to my weekly o.b. checkup - My near death experience at the consignment sale had resulted in my now being 3 cm. (Are you uncomfortable with this centimeter talk? Warning: I'm not done.)

I wasn't feeling great....Getting around was a challenge. My joints were sore. I could hardly bend over. I couldn't lift my kiddos. Cooking dinner was not an option...period. I was done. My daily prayer was God, if baby girl is not ready, please give me patience to wait on your best timing...but if today could be the day she comes, that would be great.

The next day, I decided to hit another consignment sale. Why not?! It was against my better judgment to go...I felt terrible. Terrible. But my friend and I had discussed going, and I really didn't want to miss hanging out with her. So, we met up at the sale...each with a double stroller and a thirty-one tote...and we got our shop on! Thankfully, this sale was held in a building that had air-conditioning...but their line? Well, once again, I was faced with standing in a crazy long line. Fortunately, the line didn't take too terribly long...but I decided that we needed to go to Chick-fil-a so I could recover with a Cookies & Cream milkshake. I had earned it. 

The milkshake led to a slight sugar coma...so I made the trek back home and napped while my boys did. As we made our way through the evening, I started to wonder if something more than just 3 cm. was going on. Friends, there's no need to discuss these particular details. Let's just fast forward to my calling the triage nurse...running my symptoms by her...and her suggesting that I drive over to the hospital to be checked just in case...because it was my third time around the baby block

On our way to the hospital, hubby assured me that it was probably just a false alarm. We had been through false alarms before...so he was convinced that we would be heading back home later that evening. My contractions were intensifying a bit, and as we entered the hospital, he said manly things like You're okay, just walk it off. (Wasn't that sweet?)

After walking it off, we made our way to triage where it was quickly determined that I was 7 CENTIMETERS!! YES, FRIENDS! S.E.V.E.N. Walk it off, he said?!

Do you know what a girl like me hears when the doctor says, You're already seven centimeters!? She hears, You are too late for your epidural. (I knew about all of the preliminary stuff they needed to do before they could actually give it to me.) 

Friends, I panicked. 

Panicked.

Freaked.

Totally lost it. 

Began to cry. 

Began to shake...and lose my breath...and quote the Psalms. 

Listen, I had been to 8 centimeters without an epidural before, and I was not interested in going down that road [or further] again. Not ever.

You may think I'm a wimp. You may think I'm a terrible mother. You may think I am an embarrassment to women everywhere. 

But listen...My birth plan included one thing: An Epidural! 

I had no plan B. If there wasn't going to be an epidural, I was going to have to go back home. Having the baby was not going to be an option. I literally could not face it. 

My hubby tried to call me down...Getting upset is only going to make things worse, he said. (This was the second time that evening when I almost strangled him.)

There was no calming me down...so I implemented my not-so-subtle plan of telling e.v.e.r.y.o.n.e. who came in my hospital room that I needed the epidural immediately. When will my epidural arrive? How much longer until I receive my epidural? Where's the anesthesiologist? Is he in surgery? Is he on site at the hospital? Can I have his cell phone number? No one would give me a straight answer - including the housekeeping staff who had simply entered my room to deliver additional trash bags and bed sheets.

Finally, the medicine man arrived. I have never been so happy to see anyone in my entire life. I began to clap...and cheer...and squeal in delight! Yes, please stick me in the back with a giant needle! Bring.it.on. I love you, sir. You are my favorite person in the whole wide world. You may be wondering if I really said those things out loud. Yes, yes I did. 

It was the most beautiful epidural I have ever had. All three have been good, but this one worked perfectly. 

It was a full moon weekend (which I knew because I had been watching the date for 9 months!). The hospital was slammed, and I labored all.the.way.down - waiting on the doctor to be available to come in and deliver our little girl. A nurse popped in the room and said, The doctor says to go ahead and start pushing - She's right down the hall when we're ready for her. I will - once again - spare you the details - but let's just say, no pushing took place. 

The nurse immediately yelled for the doctor. 

The doctor ran in and yelled to the nurse Get me some gloves before the baby hits the floor. 
(Such comforting words that every mother wants to hear.)

And seconds later, I was holding the sweetest little baby girl in the world. 

I immediately noticed how tiny she seemed! My first baby was 9 lbs. 6. oz. My second baby was 10 lbs. 4 oz. This little gal entered the world at 7 lbs. 7 oz. We still can't get over the difference! She is actually wearing newborn diapers...and newborn clothes! 

Born a couple of weeks before her due date, she has completely stolen our hearts. We are so thankful for a smooth delivery and a healthy baby girl...

...and for epidurals...

...and full moons...

...and consignment sales.

Painting with Cookie Cutters

Painting with cookie cutters is so much fun and the options are endless when it comes to using them for teaching and learning:
Cookie Cutters

Demonstrate to your child how to dip each cookie cutter in an appropriate amount of paint. 
*For this activity, we usually put paint out on paper plates or small foil pans.* 

Allow them to dip & stamp.
*White drawing paper or construction paper works great for this activity.
